Forbici, a pizzeria praised by renowned chef Marco Pierre White as serving the "very best pizza I’ve ever had," will open its first London site on Tuesday, October 27 at 120 Tooley Street in London Bridge. The restaurant already has locations in Manchester and Sheffield and is known for its Neapolitan-style pizzas made with a special three-generation Biga dough. This unique technique combines traditional Italian methods with their own fermentation process to create an exceptionally light and airy crust, cut fresh with scissors (hence the name "Forbici," which means "scissors" in Italian). The pizzeria has been recognized among the Top 100 Best Pizzas in the World, making it one of just two UK restaurants to earn this distinction. Among its specialties are the Provola e Pepe, topped with San Marzano tomato, smoked provola, black pepper, and fresh basil, as well as the Porcini e Tartufo, featuring Fior di latte, porcini mushrooms, and Italian truffle on a white base.
