Three friends – Charlie Curnow, former Carlton player now with Sydney Swans; William Wade, ex-Noma chef; and local Torquay chef Rory Benzie – have turned their dream into reality by opening a new Mexican-inspired eatery called Mule on Victoria’s Surf Coast. The restaurant features a tight menu of dishes cooked over a central wood fire, including Otway pork marinated in adobo for 24 hours and roasted for three hours on a vertical rotisserie known as a trompo. Other highlights include Queensland wagyu smoked over red gum, Crystal Bay prawns grilled with chipotle butter, and fish tacos made with ling in squid-ink batter. The venue offers an indoor bar and outdoor seating area designed with exposed brick and veneer walnut cabinetry. Mule also serves five styles of margaritas to complement its tequila-based cocktail menu.
