Felix Goodwin and his partner Elena Nguyen, the duo behind the popular gluten-free bakery Kudo, have opened a new triple-threat venue called Itera in Melbourne, Australia. The establishment combines a takeaway bakery, a shop for pantry essentials, and a 26-seat cafe. Ex-Sunda pastry chef Goodwin and his partner bring a touch of restaurant finesse with the menu, which includes unique dishes such as cheesy corn, gruyere rarebit with Vegemite butter, and crumbed prawn patties in brioche buns. The bakery also offers rotating flavors of famous Kudo caneles and gluten-free congee pot pies inspired by Nguyen's Vietnamese heritage. Notably, all menu items are gluten-free but do not look any different from regular options.
